ANDHRA RASAM
Till about 20 years ago I didn't even know that such a dish as Andhra Rasam existed.
I don't know what they call it in Telugu.
Here's the recipe:
Ingredients Required
*Cooking Method*
Cut the onion and tomatoes into small pieces. Dry roast the other ingredients until the Jeeragam splutters. Grind the onion, tomatoes and the other ingredients into a smooth paste.
Pour the paste into a vessel, add the Tamarind water, add a few curry leaves, turmeric powder and salt. Let the concoction boil for 10 minutes.
Add more water if necessary. After it sufficiently boils add a few more curry leaves and season with mustard seeds in ghee. That is all.
A tip:
Don't add பெருங்காயம் asafoetida. The two kAyams வெங்காயம் onion and பெருங்காயம் asafoetida kill the aroma of each other. This holds good for வெங்காய சாம்பார் Onion Sambar also.
If Andhra people have a name for this Rasam please give me the nomenclature.
As far as I know no other Rasam is made with Onion. And that's the speciality.
